Old-Fashioned Honey Cake

Recipe

For the honey cake you will need

  1. 1 cup of sugar

  2. 1 cup of honey

  3. 1 cup of sour cream

  4. 1 teaspoon of baking soda

  5. 1 teaspoon of cloves

  6. 3-4 eggs depending on their size

    Note: if the eggs are small, you will need 4.

  7. ~3 cups of flour

Preparation

  1. Put 1 cup of honey into a pot

  2. Over medium heat, stir the honey

  3. Stir the honey until it starts to bubble.

    Note: bubbling changes the flavor of the honey.

  4. Set the honey aside to cool

  5. Grind or crush the cloves

  6. Separate the egg whites from the yolks into separate bowls

  7. Add 0.5 cup of sugar to the egg whites, and the other 0.5 to the yolks

  8. Whisk the egg whites and the yolks

  9. Put the sour cream into a bowl

  10. Add a teaspoon of baking soda to the sour cream

    Note: baking soda thins the sour cream.

  12. Pour the honey into the bowl

  13. Mix everything together

  14. Add the cloves and stir

  16. Add the egg whites and stir

  17. Keep adding flour and keep stirring

    Note: add just enough flour to reach a sour cream consistency.

  18. Take a baking tin or dish

  19. Line it with parchment paper

    Note: the batter will rise to double its size, so the dish must be 2 times larger than the volume of the batter.

  20. Pour the batter into the tin or dish

  21. Preheat the oven to 180°C, top and bottom heat

  22. Bake for 45 min
